Marzipan Confections with Cherries, Chocolate, and Almonds
Marzipan bites with pickled cherries, dark chocolate, and chopped almonds. I love making confections myself, but it should be easy, manageable, and with a fairly good chance of success. And that is exactly how it is with these wonderful little bites.
Sprinkle some powdered sugar on the table and use a rolling pin to roll out the marzipan flat, about 5 mm thick. If you have a silicone mat, it can also be used.
Place the cherries in a row in the middle of the marzipan and then roll the marzipan into a long tube (see the image below if necessary).
Seal the “tube” at the ends so the cherries don’t fall out.
Cut the marzipan roll into about 12 equally sized pieces.
Melt the chocolate in a bowl over a water bath or in the microwave and dip the marzipan pieces in it. Sprinkle almond slivers on top and put the marzipan pieces in the fridge until the chocolate sets. Serve.

Notes
Tip! If you use the microwave to melt, give the chocolate 30 seconds at a time until you can start stirring it - then take it out and stir while the remaining chocolate finishes melting. This way, you avoid it burning.
