Langoustine hotdog with crispy onion rings

Ingredients

Onion Rings

  • 20 pcs. Lobster Tails peeled
  • 1 pcs. Onion cut into thick slices
  • 52 gram Flour
  • 34 gram Panko Breadcrumbs
  • 1 pcs. Egg whisked together
  • Oil for frying

Hotdog

  • 190 gram Mayonnaise
  • 1/2 clove Garlic chopped
  • 30 gram Lemon Juice
  • 8 leaves Romaine Salad
  • 4 pcs. Bread Brioche hotdog buns
  • 6 gram Watercress
  • Salt and Pepper

Instructions

Onion rings

  • Bread the onion rings in flour, eggs, and panko breadcrumbs.
  • Fry the onion rings in plenty of oil in a pan.
  • Once they are golden and crispy, place them on grease-absorbing paper.

Hotdog

  • Sauté the langoustines in a hot pan with oil.
  • Cook them for just a couple of minutes, don't overcook them!
  • Mix mayo with garlic and lemon juice, optionally put it in a piping bag.
  • Warm the hotdog buns.
  • Fill them with romaine lettuce, mayo, and langoustine.
  • Finish with the crispy onion rings and sprinkle with cress and chives.
