Homemade milk slices

Homemade milk slices are not as difficult as they might sound. The recipe doesn't require many ingredients and this version is gluten-free. If you don’t want it to be gluten-free, simply replace the rice flour with wheat flour.

Ingredients

Gluten-free base

  • 3 pcs. Egg
  • 170 gram Sugar
  • 60 gram Melted butter
  • 55 gram Cocoa powder
  • 140 gram Rice Flour rice flour for gluten-free otherwise use wheat flour
  • 9.6 gram Baking Soda
  • 8.4 gram Vanilla Sugar
  • 50 gram Whole Milk
  • 1.5 gram Salt

Fill

  • 300 gram Cream Cheese nature
  • 60 gram Powdered Sugar
  • 20 gram Lemon Juice
  • 8.4 gram Vanilla Sugar
  • 14.2 gram Honey
  • 200 gram Whipping Cream

Instructions

Base (gluten-free)

  • Beat eggs and sugar until white and frothy.
  • Add the melted butter.
  • Mix rice flour, vanilla sugar, baking powder, salt, and cocoa and stir it into the egg mixture a little at a time, alternating with the milk.
  • Pour the batter into a mold (40 x 30 cm) lined with baking paper.
  • Bake at 180 degrees Celsius (356 degrees Fahrenheit) for 10 minutes in a conventional oven.
  • Let the cake cool completely.

Filling

  • Beat cream cheese, powdered sugar, lemon juice, honey, and lemon zest.
  • Lightly whip the cream and fold it into the cheese mixture.
  • Cut the cake base into two equal parts (as if you were splitting a layer cake base) and spread the cheese mixture on one base, then place the other base on top. Refrigerate the cake for 2 hours and then cut it.
