Ingredients
Gluten-free base
- 3 pcs. Egg
- 170 gram Sugar
- 60 gram Melted butter
- 55 gram Cocoa powder
- 140 gram Rice Flour rice flour for gluten-free otherwise use wheat flour
- 2 tsp. Baking Soda
- 2 tsp. Vanilla Sugar
- 0.5 dl Whole Milk
- 0.25 tsp. Salt
Fill
- 300 gram Cream Cheese nature
- 60 gram Powdered Sugar
- 20 gram Lemon Juice
- 2 tsp. Vanilla Sugar
- 2 tsp. Honey
- 2 dl Whipping Cream
Instructions
Base (gluten-free)
- Beat eggs and sugar until white and frothy.
- Add the melted butter.
- Mix rice flour, vanilla sugar, baking powder, salt, and cocoa and stir it into the egg mixture a little at a time, alternating with the milk.
- Pour the batter into a mold (40 x 30 cm) lined with baking paper.
- Bake at 180 degrees Celsius (356 degrees Fahrenheit) for 10 minutes in a conventional oven.
- Let the cake cool completely.
Filling
- Beat cream cheese, powdered sugar, lemon juice, honey, and lemon zest.
- Lightly whip the cream and fold it into the cheese mixture.
- Cut the cake base into two equal parts (as if you were splitting a layer cake base) and spread the cheese mixture on one base, then place the other base on top. Refrigerate the cake for 2 hours and then cut it.
