Homemade Coleslaw

Homemade coleslaw. This American salad with raw cabbage and carrots is perfect for pulled pork and grilled pork, for example.

Ingredients

  • 0.5 pcs. Pointed Cabbage Use a whole pointed cabbage if it's a small one. White cabbage or red cabbage can also be used.
  • 2 pcs. Carrots Large. 3 if they are small.
  • 15 gram Sweet mustard
  • dl Apple Cider Vinegar
  • 6 gram Salt
  • 12.5 gram Sugar
  • 1.1 gram Cumin Ground
  • Pepper Freshly ground - to taste
  • 100 gram Greek Yoghurt Can be crème fraîche or plain yogurt
  • 95 gram Miracle Whip Can also be Hellmann's or similar
  • 95 gram Mayonnaise Homemade
  • 4.2 gram Sugar
  • 5 gram Lemon Juice

Instructions

  • Wash the cabbage and remove the outer leaves. Slice it into fine, thin pieces.
  • Peel the carrots and grate them on a coarse grater.
  • I always press out as much water from my carrots as possible: Either by placing them in a sieve and pressing something heavy over, or by placing them in a muslin/cheesecloth to squeeze out the liquid.
  • Mix the cabbage and carrots in a large bowl.
  • Mix mustard, apple cider vinegar, salt, sugar, cumin, and freshly ground pepper into a marinade in a large plastic bag (freezer bag).
  • Mix the cabbage and carrots in the marinade in the bag. Close it at the top and shake it all around well.
  • Let it sit in the fridge for about an hour.
  • Take the cabbage mixture out of the fridge and wring out the liquid.
  • Mix the Greek yogurt with lemon juice, sugar, Miracel Whip, and homemade mayonnaise in a bowl to make a dressing.
  • Toss the cabbage mixture in the dressing shortly before serving.
