Greek-inspired bruschetta

Ingredients

  • 1 pcs. Red Onion finely chopped
  • 1 clove Garlic finely chopped
  • 5 pcs. Tomato coarsely chopped
  • 3 pcs. Sundried tomatoes halved/in oil, finely chopped
  • 0.5 gram Basil dried
  • 0.25 gram Oregano
  • 27 gram Olive Oil
  • 200 gram Feta crushed to crumbs
  • 100 gram Sour Cream
  • 1 pcs. Avocado
  • 1 handful Basil Leaves chopped
  • Salt and Pepper
  • 8 slices Bread

Instructions

  • 1.    Mix the red onion, garlic, tomatoes, sundried tomatoes, dried basil, dried oregano, and olive oil together. Season with salt and pepper and set aside.
  • 2.    Mix the avocado and sour cream together and season with salt and pepper.
  • 3.    Toast your bread on both sides in a hot pan and place them on a piece of parchment paper.
  • 4.    Generously spread the tomato salsa on each piece of bread and sprinkle feta cheese over the top.
  • 5.    Bake your bruschetta in a preheated oven at 200 degrees Celsius (392 degrees Fahrenheit) for 10-15 minutes and serve them with the freshly chopped basil on top.
