Saithe is a popular fish here at home. It can be prepared in many different ways, but if you want to try something new, take a look here. Here I have a fantastic recipe for fried saithe – and it's really easy to make.
Start by gourmet salting the fish for 10 minutes. This intensifies the flavor and helps retain the juice. Sprinkle coarse salt on both sides of the fish and let it rest on a plate in the meantime.
Rinse the fish to remove the salt mixture and pat it dry with a clean dish towel.
Fry the fish in butter for 3 minutes on each side over medium-high heat (8 out of 14 on my stove).
Remove the fish from the pan and serve with your chosen side dish.
