I have a fantastic recipe for pan-fried pollock – and it’s really easy to make. You only need a few ingredients, and then you’re good to go. I am a frequent “guest” at my local fishmonger down at the market. So we’re pretty much on a first-name basis! He constantly gets new delicious, fresh supplies, and he loves to show them off and talk about them. Lucky for my husband and me, as we both love coming home with something unexpected in our shopping bag. This time it was pollock. Pollock is part of the cod family, and it is actually one of the most common eating fish here in Denmark. Pollock is one of the cheaper cod species, and the flesh is somewhat darker than regular cod. Almost a bit grayish. It has deliciously firm flesh, which makes it excellent for pan-frying, and that’s why pan-fried pollock made it onto the menu! - Frying Pan
Ingredients
- 450 g Saithe
- Salt
- Butter
Instructions
- Start by gourmet salting the fish for 10 minutes. This intensifies the flavor and helps retain the juice. Sprinkle coarse salt on both sides of the fish and let it rest on a plate in the meantime.
- Rinse the fish to remove the salt mixture and pat it dry with a clean dish towel.
- Fry the fish in butter for 3 minutes on each side over medium-high heat (8 out of 14 on my stove).
- Remove the fish from the pan and serve with your chosen side dish.
