Instructions
Whisk sugar and egg whites together, without making them stiff.
They should just be whisked until coherent and lightly airy.
Whisk in vanilla and salt.
Melt the butter, and fold butter and flour into the dough.
Preheat the oven to 175 degrees Celsius (347 degrees Fahrenheit) (fan).
Spread 1 tbsp. dough on a silicone mat or a baking sheet with parchment paper using a small spatula.
I made mine 10-12 cm long.
Bake the cookies in the oven one sheet at a time for 7-10 minutes.
Keep an eye on them so they don't get too dark.
Take them out and fold the hot cookies around a piece of paper with a fortune.
Fold the cookies in half so they get the right shape, and hang them on a glass so they can cool down and get the classic fortune cookie shape.
The cookies can be made 1 week in advance.
