Recipe for fortune cookies

Recipe for fortune cookies or whatever you may call them in Danish. You surely know them from American movies, but why not try making them yourself?

We have the recipe from the book “Cookies“, where the author Louisa Lorang writes the following about the recipe:

“They are perfect for New Year’s Eve, where you can ensure all your guests receive a delightful fortune for the new year. Or use them for children’s birthdays, parties,
or other occasions. Remember to come up with funny fortunes that make your guests happy.”

The recipe yields 25-30 pieces and of course requires a corresponding number of slips for the fortunes.

Equipment

  • Whisk

Ingredients

  • 200 gram Sugar
  • 125 gram egg white about 4 pcs.
  • 0.5 pcs. Vanilla Pod the seeds - or 2 tsp. vanilla powder
  • 1 pinch Salt
  • 115 gram Butter
  • 120 gram Wheat Flour

Instructions

  • Whisk sugar and egg whites together, without making them stiff.
  • They should just be whisked until coherent and lightly airy.
  • Whisk in vanilla and salt.
  • Melt the butter, and fold butter and flour into the dough.
  • Preheat the oven to 175 degrees Celsius (347 degrees Fahrenheit) (fan).
  • Spread 1 tbsp. dough on a silicone mat or a baking sheet with parchment paper using a small spatula.
  • I made mine 10-12 cm long.
  • Bake the cookies in the oven one sheet at a time for 7-10 minutes.
  • Keep an eye on them so they don't get too dark.
  • Take them out and fold the hot cookies around a piece of paper with a fortune.
  • Fold the cookies in half so they get the right shape, and hang them on a glass so they can cool down and get the classic fortune cookie shape.
  • The cookies can be made 1 week in advance.

TIP: I translated all my fortunes to Chinese via Google Translate – it looks cute, I think.
