Instructions
Scrub or peel potatoes and carrots and cut both into cubes.
Spread the vegetables on a baking sheet lined with parchment paper and toss them with oil and salt.
Bake them in the oven at 175 degrees Celsius (347 degrees Fahrenheit) for 20 minutes, until tender and golden.
Cut the pork chops into cubes and fry them in half of the butter in a pan until golden. Season the meat with salt and pepper and set aside on a plate.
Peel and chop the onion. Fry it in the remaining butter in a pan until soft but not browned.
Add the roasted potatoes and carrots along with the pork chops, and let it cook for a few minutes. Season with salt, pepper, and Worcestershire sauce.
Place the hash on a serving platter.
Fry the eggs in butter in the pan until they are cooked to your preference.
Rinse and chop the parsley.
Serve the hash with
pickled beets
and a sprinkle of parsley.
