Creamy pasta dish with squash, peas, and bacon

Creamy, easy and delicious pasta dish with peas, squash, cream sauce, and lots of cheese... On top crispy bacon and grated parmesan... Not much more to say than a tasty, ideal everyday meal. Ready in under 30 minutes!

Ingredients

  • 300 gram Pasta
  • 200 gram Bacon diced
  • 1 pcs. Onion
  • 2 cloves Garlic
  • 250 gram Cream
  • 2 pcs. Egg
  • 3 gram Salt
  • 1 gram Thyme dried
  • 7.5 gram Lemon Juice
  • 150 gram grated cheese
  • 120 gram Peas frozen
  • 1 pcs. Squash grated
  • 200 gram Water preferably pasta cooking water
  • 1 pcs. Vegetable Broth
  • 100 gram Parmesan grated
  • 1 handful Broad leaf parsley

Instructions

  • Put the pasta on to boil
  • Fry the bacon until crispy in a deep pan or pot. Then remove the bacon from the pan.
  • Finely chop the onion and garlic and sauté them in the pan for 2-3 minutes until the onions are just soft.
  • Mix the cream, eggs, salt, pepper, thyme, and lemon juice and add to the pan along with the squash, grated cheese, and peas.
  • Drain the pasta (but save 2 dl of the water) and mix both the pasta and the 2 dl of water into the pan along with the bouillon cube. Let it simmer for about 5 minutes, stirring occasionally, and add more water if necessary, depending on how thick you want the sauce.
  • Season to taste and serve with bacon, parmesan, and chopped parsley on top.
