Cod in the oven

Ingredients

  • 2 pcs. Cod cod portions
  • 3 pcs. Carrots
  • 1 pcs. fennel
  • 98 gram Noilly Prat or dry white wine
  • Spices salt and pepper
  • Potato cold, preferably from the day before
  • Olive Oil

Instructions

  • Lay the cod in a small ovenproof dish. Brush the fish with a little olive oil and season it with salt and pepper.
  • Peel the carrots and cut off the top of the fennel - save it. Cut carrots and fennel into small cubes.
  • Season with salt and pepper, and pour Noilly Prat over the ingredients in the dish.
  • Bake the entire dish in the oven for about 20-25 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
  • Cut the cold potatoes into slices and season them with salt and pepper. Drizzle with a splash of olive oil and garnish with the fennel top.
  • Serve the oven-baked cod with the potato side dish.
