Recipe for cod in the oven
An easy and delicious recipe for oven-baked cod with vegetables.
When time is short but you still want to serve something healthy, this recipe is just what you need!

Ingredients
- 2 pcs. Cod cod portions
- 3 pcs. Carrots
- 1 pcs. fennel
- 98 gram Noilly Prat or dry white wine
- Spices salt and pepper
- Potato cold, preferably from the day before
- Olive Oil
Instructions
- Lay the cod in a small ovenproof dish. Brush the fish with a little olive oil and season it with salt and pepper.
- Peel the carrots and cut off the top of the fennel - save it. Cut carrots and fennel into small cubes.
- Season with salt and pepper, and pour Noilly Prat over the ingredients in the dish.
- Bake the entire dish in the oven for about 20-25 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
- Cut the cold potatoes into slices and season them with salt and pepper. Drizzle with a splash of olive oil and garnish with the fennel top.
- Serve the oven-baked cod with the potato side dish.
