Chili con carne with chocolate and cinnamon

A good chili con carne should have depth of flavor and ideally contain several types of chilies. Cumin, cinnamon, and dark chocolate are also essential.

Ingredients

Chili con carne

  • 400 gram Ground Beef
  • 2 pcs. Onion
  • 2 cloves Garlic
  • 100 gram Beans dried brown beans
  • 30 gram Tomato Puree
  • 1 can Tomato peeled
  • 1.5 gram Chili crushed
  • 8 gram Chili chipotle
  • 2.3 gram Paprika
  • 2.1 gram Cumin
  • 2.6 gram Cinnamon
  • 18 gram Tamari
  • 30 gram Dark chocolate about 30-35 g dark bitter chocolate, minimum 70%
  • Coarse salt
  • Pepper from grinder
  • Oil for frying

Guacamole

  • 1 pcs. Lime
  • 1 pcs. Avocado
  • 1.5 gram Powdered Sugar
  • 1 clove Garlic crushed
  • Cilantro fresh

Serving

  • Jalapenos to taste
  • Tortilla Chips to taste

Instructions

Chili con carne

  • Soak the beans in cold water overnight.
  • Drain the water from the beans and boil in new salted water for about 1 hour until tender.
  • Drain the water.
  • Peel onions and garlic, chop them finely, and sauté in some oil for a couple of minutes.
  • Add the meat and stir well.
  • Add tomato paste, cumin, cinnamon, paprika, crushed chili, and chopped chipotle chili.
  • Cook for a couple of minutes, then add peeled tomatoes.
  • Let it simmer for at least ½ hour, preferably longer.
  • Season with salt, pepper, and tamari, and add the cooked beans.
  • Stir finely chopped chocolate into the sauce and season with salt, pepper, and possibly more chili.

Guacamole

  • Scoop out the avocado flesh and chop it coarsely with coriander, garlic, lime juice, salt, and a bit of powdered sugar.

Serving

  • Serve the chili con carne with guacamole, warm tortilla chips, and jalapeños.
