Cauliflower Waffles with Salmon, Fried Egg, and Avocado

Ingredients

Cauliflower Waffles

  • 500 gram Cauliflower
  • 80 gram Oatmeal possibly gluten-free
  • 8 gram Flour
  • 2 pcs. Egg
  • 25 gram Parmesan freshly grated
  • 1 gram Oregano dried
  • 6 gram Salt
  • 1 gram Pepper

Pesto Cream

  • 30 gram Green pesto
  • 15 gram Cream Cheese plain

Fill

  • 2 handfuls Salad
  • 100 gram Salmon hot- or cold-smoked
  • 2 pcs. Egg fried egg
  • 1 pcs. Avocado ripe, sliced
  • Salt and Pepper

Instructions

Cauliflower Waffles

  • Cut the cauliflower into smaller pieces, you can also use the stem, and put it in a blender or food processor along with the other ingredients. Blend until you have a firm, fairly coherent batter.
  • Heat up a waffle iron and put a little butter on it. Then spread the batter on the plate – I simply used a spoon to distribute the batter, and cook the waffles until they are firm and golden.

Pesto Cream

  • Mix the pesto and cheese well together.

Serving

  • Spread the pesto cream on your waffle. Add lettuce, salmon, fried egg, and avocado on top and season with salt and pepper – serve.
