Caesar salad with homemade croutons and crème fraîche dressing

Caesar salad is one of those salads that is always a hit at home; simple and with few ingredients, but ingredients that just go well together in a salad that just tastes delicious! Caesar salad consists of fresh romaine lettuce tossed in a homemade crème fraîche dressing, grilled chicken, plenty of parmesan, and crispy croutons on top – yum, what a winner.

Ingredients

Salad

  • 300 gram Chicken Fillet
  • Butter for frying + a bit of salt and pepper
  • 2 pcs. Romaine Lettuce
  • 25 gram Parmesan in flakes

Croutons

  • 4 slices Bread light, dark can also be used
  • 28 gram oil
  • 6 gram Salt
  • 1 gram dried thyme

Creme fraiche dressing

  • 150 gram Sour Cream
  • 28 gram Mayonnaise
  • 1/2 clove Garlic
  • 5 gram Dijon Mustard
  • 7 gram Honey liquid
  • 15 gram Lemon Juice
  • 10 gram Parmesan finely grated
  • Salt and Pepper

Instructions

  • Start by cutting the bread into cubes and toss with oil, salt, and thyme. Spread out on a baking tray and bake for 15 minutes at 180 degrees Celsius (356 degrees Fahrenheit), regular oven – turn a couple of times.
  • Cut the chicken into cubes and brown in a pan with some butter, season with salt and pepper.
  • Blend all the ingredients for the dressing together.
  • Rinse and cut the lettuce into small pieces and toss with the dressing – possibly save a little for serving.
  • Arrange the salad on plates and top with chicken, parmesan, and croutons – serve
