
Recipe for caesar salad with homemade croutons and crème fraîche dressing
Meal salads are and always will be a hit; easy, quick dishes with incredible variety, packed with vitamins and good ingredients. They leave the body feeling pleasantly full and refreshed, boosted with energy without the meal being too heavy – I really like that.
Caesar salad is one of those salads that is always a hit at home; simple and with few ingredients, but ingredients that just work well together in a salad that simply tastes great! Caesar salad consists of fresh romaine lettuce tossed in a homemade crème fraîche dressing, sautéed chicken, plenty of parmesan, and crispy croutons on top – yum, what a winner.
I used romaine lettuce in this one, but you can use exactly the type of lettuce you prefer. It could also be crisp lettuce or iceberg, for example.
I make the croutons and dressing myself, but if you want it to be even quicker, you can buy both ready-made – and you can also buy the sautéed chicken, for that matter. The salad is thus easy to adapt according to the time and desire to be in the kitchen – regardless, it tastes delightful and works perfectly both as a delicious lunch or quick dinner – serve it perhaps with a good piece of bread for more substance.

Caesar salad with homemade croutons and crème fraîche dressing
Ingredients
Salad
- 300 gram Chicken Fillet
- Butter for frying + a bit of salt and pepper
- 2 pcs. Romaine Lettuce
- 25 gram Parmesan in flakes
Croutons
- 4 slices Bread light, dark can also be used
- 2 tablespoon oil
- 1 tsp. Salt
- 1 tsp. dried thyme
Creme fraiche dressing
- 1,5 dl Sour Cream
- 2 tablespoon Mayonnaise
- 1/2 clove Garlic
- 1 tsp. Dijon Mustard
- 1 tsp. Honey liquid
- 1 tablespoon Lemon Juice
- 2 tablespoon Parmesan finely grated
- Salt and Pepper
Instructions
- Start by cutting the bread into cubes and toss with oil, salt, and thyme. Spread out on a baking tray and bake for 15 minutes at 180 degrees Celsius (356 degrees Fahrenheit), regular oven – turn a couple of times.
- Cut the chicken into cubes and brown in a pan with some butter, season with salt and pepper.
- Blend all the ingredients for the dressing together.
- Rinse and cut the lettuce into small pieces and toss with the dressing – possibly save a little for serving.
- Arrange the salad on plates and top with chicken, parmesan, and croutons – serve
