Caesar dressing

Equipment

  • 1 Electric whisk or whisk or immersion blender

Ingredients

  • 1 Anchovy Fillets finely chopped
  • 1 clove Garlic small clove, pressed/finely grated/finely chopped
  • 50 gram Parmesan freshly grated
  • Salt and pepper
  • 2 pcs. Pasteurized egg yolks
  • 5 gram Dijon Mustard
  • 15 gram White Wine Vinegar
  • 45 gram Olive Oil
  • 15 gram lemon juice

Instructions

  • Finely chop anchovies and garlic and place them in a bowl.
  • Place the egg yolks in a bowl.
  • Add mustard, white wine vinegar, and salt and pepper.
  • Whisk the ingredients together with a hand mixer, whisk, or immersion blender until well combined.
  • Finely grate the Parmesan cheese and stir it into the dressing.
  • Add the olive oil a little at a time, continuing to whisk until the dressing is thick and creamy.
  • Add lemon juice and season to taste with salt/pepper.
  • Stir well until all the ingredients are well combined.
  • Your homemade Caesar dressing is now ready to be used on your favorite salad!
