Buns with apples and dates

Ingredients

  • 50 gram Yeast equivalent to 1 package of yeast
  • 6 gram Salt
  • 12.5 gram Sugar
  • 400 gram Water lukewarm
  • 100 gram Yogurt can be substituted with e.g. A38 or another sour milk product
  • 2.6 gram Cinnamon ground
  • 2 pcs. Apples coarsely grated
  • 75 gram Dates Chopped. Can be substituted with chopped raisins or apricots
  • 150 gram Oatmeal
  • 600 gram Wheat Flour
  • 1 pcs. Egg for brushing

Instructions

  • Crumble the yeast in a large bowl or dough basin.
  • Pour the water into the bowl and dissolve the yeast in it. Add salt and sugar.
  • Add yogurt, cinnamon, grated apples, dates, and oats. Stir everything well together.
  • Add the flour gradually; you may need a little more or less, so you have to try it out. The dough should be smooth and slightly moist.
  • Let the dough rise under a damp tea towel for about 1 hour.
  • Shape the dough into buns and place them on a baking sheet lined with baking paper. 
  • Let them rise again for 30 minutes.
  • Beat the egg and brush the buns. 
  • First, bake the buns at 225 degrees Celsius (437 degrees Fahrenheit) for 5 minutes.
  • Reduce the heat to 200 degrees Celsius (392 degrees Fahrenheit) and bake them until done - approximately 10-15 minutes.
  • Let the buns cool on a wire rack.

Notes

You can use both coarse and fine oats in this recipe. So use what you have in stock!
