Baked quinoa porridge with berries, coconut and almonds

Baked porridge tastes just wonderful, somewhat like cake, also in consistency, but without being the least bit sinful. The baked porridge becomes soft in the middle and crispy on top, and if you serve an ice-cold dollop of skyr or Greek yogurt with the warm porridge, well, then the taste buds dance.

Ingredients

Baked porridge

  • 70 gram Quinoa cooked
  • 35 gram Oatmeal
  • 1 pcs. Banana ripe and mashed
  • 2 gram Cardamom ground
  • 4 gram Vanilla Sugar
  • 21 gram Honey
  • 100 gram Berry I used a mix from the freezer
  • 50 gram Coconut Milk
  • 1 pcs. Egg
  • 200 gram Coconut Milk
  • 1 handful Almonds chopped

Suggestions for serving

  • Plain yogurt or Greek yogurt
  • Syrup a little

Instructions

  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit), regular oven.
  • Mix all the ingredients for the porridge (except almonds) together and spread in a small ovenproof dish. Sprinkle the chopped almonds on top of the porridge. Cook in the oven for 30 minutes.
  • Serve with Greek yogurt and a bit of syrup
