
Recipe for baked quinoa porridge with berries, coconut and almonds
Baked porridge with coconut, berries, and almonds – it is just a really delightful breakfast.
This porridge is baked with quinoa, which is filled with dietary fibers and the good omega-3 fatty acids. Additionally, it contains sweet banana, various berries, and almonds.
Baked porridge tastes just wonderful, somewhat like cake in both flavor and texture, but without being the least bit sinful. The baked porridge becomes soft in the middle and crisp on top, and if you serve it with a cold dollop of skyr or Greek yogurt on the warm porridge, well then your taste buds will dance.
Baked porridge can be made with water or milk – for this one, I used coconut milk, which complements the flavor very well. The coconut flavor isn’t overwhelming, but if you’re not at all into it, you can simply use water or regular milk.
This kind of dish is cozy on weekends when you want to pamper your breakfast a bit, but it’s also good on weekdays since it takes only a few minutes to mix together, and the oven takes care of the rest. You can handle your morning routines in the meantime.
The porridge uses cooked quinoa, which you can buy ready-to-use in a can (available at Bilka, Føtex, and sometimes on offer at Fakta and Netto). Alternatively, you can of course cook your own or just pour boiling water over some and let them steep for 30 minutes – then they are also ready to use.
Cooked quinoa can be stored in the fridge for 2-3 days, but it can also be frozen in smaller portions and taken out as needed. That way, you’ll quickly have a delicious breakfast ready.

Baked porridge
- 70 gram Quinoa cooked
- 35 gram Oatmeal
- 1 pcs. Banana ripe and mashed
- 2 gram Cardamom ground
- 4 gram Vanilla Sugar
- 21 gram Honey
- 100 gram Berry I used a mix from the freezer
- 50 gram Coconut Milk
- 1 pcs. Egg
- 200 gram Coconut Milk
- 1 handful Almonds chopped
Suggestions for serving
- Plain yogurt or Greek yogurt
- Syrup a little
Instructions
- Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit), regular oven.
- Mix all the ingredients for the porridge (except almonds) together and spread in a small ovenproof dish. Sprinkle the chopped almonds on top of the porridge. Cook in the oven for 30 minutes.
- Serve with Greek yogurt and a bit of syrup
