Artichoke with whipped lemon butter

Whole, cooked artichokes served with a delicious and lightly whipped lemon butter. A super lovely and decorative starter that makes guests take a second look!

Ingredients

  • 4 Artichokes
  • 80 gram Butter approximately
  • 1 Lemon organic
  • 35 gram Sour Cream
  • Salt to taste
  • Pepper from a grinder

Instructions

Whipped lemon butter

  • Take the butter out of the refrigerator and weigh it out in a bowl.
  • Then let the bowl sit on the kitchen counter for 15-20 minutes, so the butter can reach room temperature.
  • Add the sour cream to the butter and whisk the two together with an electric mixer. Halve the lemon. Set one half aside.
  • Squeeze some of the juice from the other half lemon (better too little than too much) into the mixture of butter and sour cream.
  • Whisk again. Optionally, add more of the juice from the already lightly pressed half lemon, if you like.
  • Season to taste with a little salt (preferably flake salt) and freshly ground pepper.
  • Place the whipped lemon butter in the fridge.

Cooked artichokes

  • Find a pot that can hold all 4 artichokes.
  • Fill the pot with water.
  • Slice the last half lemon and throw the slices into the water with a little salt.
  • Place the pot on the stove and bring it to a boil.
  • Find a cutting board and a large vegetable knife.
  • Cut off the stems of all the artichokes (the whole stem, yes).
  • Throw the prepared artichokes into the now boiling water.
  • Let the artichokes boil for about 20 minutes.
  • Turn off the stove and take the boiled artichokes out of the water. Optionally, place them on the cutting board or a plate to drain the excess water.
  • Place a whole artichoke on each plate and serve!
