Recipe for artichoke with whipped lemon butter

Beautiful, decorative, and insanely delicious! That’s exactly what artichokes are, and I love serving them whole because they look amazing on the plate.

If you haven’t previously been introduced to artichokes in their full form, as nature intended, you might wonder how to approach such a creature.

It’s quite simple: The whole artichoke is eaten by breaking off one leaf at a time and eating the thickest end of the leaf. That’s where you’ll find the meat. Once you’ve eaten all the leaves, the magnificent artichoke heart will be revealed. There are some small hairs that need to be removed/scraped off, and then the heart can be enjoyed.

Artichokes were actually used in the Mediterranean area for several hundred years before they were introduced to Europe in the 16th century.

Back in the day (we’re talking back in the 17th century), only men were allowed to eat artichokes. Silly, right? They believed it gave men more sexual power! Perhaps that’s why it was a beloved dish among princes, Romans, and noblemen.

The other day, I served boiled artichoke with a truly delicious lemon butter – and nothing else. Simple? Absolutely! Delicious? You bet your artichoke it was!

Artichoke with whipped lemon butter

Whole, cooked artichokes served with a delicious and lightly whipped lemon butter. A super lovely and decorative starter that makes guests take a second look!

Ingredients

  • 4 Artichokes
  • 80 gram Butter approximately
  • 1 Lemon organic
  • 35 gram Sour Cream
  • Salt to taste
  • Pepper from a grinder

Instructions

Whipped lemon butter

  • Take the butter out of the refrigerator and weigh it out in a bowl.
  • Then let the bowl sit on the kitchen counter for 15-20 minutes, so the butter can reach room temperature.
  • Add the sour cream to the butter and whisk the two together with an electric mixer. Halve the lemon. Set one half aside.
  • Squeeze some of the juice from the other half lemon (better too little than too much) into the mixture of butter and sour cream.
  • Whisk again. Optionally, add more of the juice from the already lightly pressed half lemon, if you like.
  • Season to taste with a little salt (preferably flake salt) and freshly ground pepper.
  • Place the whipped lemon butter in the fridge.

Cooked artichokes

  • Find a pot that can hold all 4 artichokes.
  • Fill the pot with water.
  • Slice the last half lemon and throw the slices into the water with a little salt.
  • Place the pot on the stove and bring it to a boil.
  • Find a cutting board and a large vegetable knife.
  • Cut off the stems of all the artichokes (the whole stem, yes).
  • Throw the prepared artichokes into the now boiling water.
  • Let the artichokes boil for about 20 minutes.
  • Turn off the stove and take the boiled artichokes out of the water. Optionally, place them on the cutting board or a plate to drain the excess water.
  • Place a whole artichoke on each plate and serve!
