Summer is the season of cucumbers, and there are plenty of ways to make this healthy vegetable more interesting in your cooking

Garden Cucumbers: The Classic Choice

The most common variety, garden cucumbers are dark green with thick skins and larger seeds. They tend to be more water-heavy than other types, which gives them a refreshing crunch but makes peeling recommended before eating.

Best uses: Peel and slice into salads or sandwiches, pair with avocado and sprouts, or dip into hummus and guacamole. They also make a great base for fresh juices.

English Cucumbers: Crisp and Seedless

Also called hothouse or seedless cucumbers, English cucumbers are long, slender, and wrapped in plastic to protect their delicate skin. They’re less watery than garden cucumbers and offer a crisp, slightly sweet taste without bitterness.

Best uses: Leave the skin on or peel partially. Great raw in salads, but also works surprisingly well in quick stir-fries and sautés.

Armenian Cucumbers: Sweet and Citrus-Noted

These heirloom cucumbers, sometimes called “snake melons,” are long, ribbed, and pale green. Their flavor is sweeter, with subtle citrus notes, and their thin skins make them ideal for eating raw.

Best uses: Enjoy sliced on a snack plate with feta and tomatoes, julienned in a slaw, or shaved into water for a refreshing twist.

Persian (Mini) Cucumbers: Perfect for Snacking

Small, crunchy, and nearly seedless, Persian cucumbers are often sold simply as “mini” cucumbers. They have sweet, floral notes and a thicker but tender skin that holds up well when sliced.

Best uses: Quarter lengthwise for snacking, cut into coins for salads, or thinly slice for garnishing cold soups and noodle dishes.

Lemon Cucumbers: Round and Refreshing

Shaped like lemons, these cucumbers are mild, crisp, and sweet with a subtle citrus aroma. Their texture resembles melon, and their skins can occasionally be fuzzy, like a peach.

Best uses: Slice into rounds to brighten up snack boards, use as a garnish for drinks, or toss into summer salads for a unique look and flavor.

Kirby Cucumbers: Pickling Favorites

Short, thick, and crunchy, Kirby cucumbers are the go-to for pickling. Their smaller seeds, firm skins, and low water content make them ideal for soaking up brine without turning mushy.

Best uses: Classic dill pickles with garlic and peppercorns, or experiment with spices like coriander, cumin, or caraway.

Gherkins: Tiny but Mighty

These bite-sized cucumbers are less common fresh but widely available pickled. They’re tart, crunchy, and a fun addition to many dishes.

Best uses: Serve pickled on a crudité platter, dice raw for a refreshing salsa, or pickle them whole for salads and snacks.
