Easy and Delicious Glaze

Recipe for yellow cake glaze
Cakes with mirror-like, shiny surfaces are seen everywhere on Instagram, Facebook, and other social media platforms. Glaze/Mirror Glaze/Glace is the answer, and we present to you our take on a beautiful, yellow version here.

Ingredients
- 4 Gelatin Sheets
- 110 gram Sugar
- 100 gram Liquid Juice, juice or milk
- 125 gram White chocolate
- 10 gram Fruit color
Instructions
- Place the gelatin sheets in a bowl of cold water for 10 minutes.
- Put sugar and the liquid in a saucepan and bring to a boil, so the sugar dissolves.
- Remove the saucepan from the heat as soon as the sugar is dissolved. Squeeze the water out of the gelatin sheets and add them to the sugar solution, stirring until the gelatin is completely dissolved. If you're unsure whether the gelatin has dissolved properly, you can strain it through a sieve.
- Finely chop the white chocolate and place it in a tall jug along with the fruit color.
- Pour the sugar solution over the chocolate and fruit color.
- Blend the chocolate and sugar solution together with an immersion blender.
- Keep the immersion blender submerged in the jug at all times, and avoid moving it too much up and down, as this can create air bubbles in the glaze.
- If there are some bubbles in the glaze, gently tap the jug against the table to release the bubbles.
- Let the glaze cool to 34-35 degrees Celsius (93-95 degrees Fahrenheit) or until it begins to thicken. If the glaze is too warm, it will run off the cake when poured.
- Ensure that the cake is thoroughly chilled before pouring the glaze over it.
- If the cake is too warm, the glaze will run off.
- Place the thoroughly chilled cake on a cooling rack or on a container slightly smaller than the cake, making it easier to pour the glaze and lift the cake afterward.
