Recipe for wild garlic mayo
Here comes another recipe with wild garlic, and it is, of course, wild garlic mayonnaise.
Wild garlic mayo can be used for so many things: for example, tartare, as a dressing in sandwiches, or just for dipping your fries.
In this recipe, you can choose how strong you want your mayonnaise to taste of wild garlic, as it requires approximately 3 dl of oil in total (so you can adjust between regular oil and wild garlic oil).
I have used my own wild garlic oil for the recipe.

Equipment
- Bowl
- Whisk (option 1)
- Hand Mixer (option 2)
Ingredients
- 2 pcs. Egg Yolk up to 3 pcs.
- 5 gram Dijon Mustard
- 30 gram Vinegar
- 138 gram Rapeseed Oil
- 230 gram Oil wild garlic oil
- Salt and Pepper
Instructions
- 1. Whisk egg yolks, mustard, vinegar, and salt until thick and white.
- 2. Next, whisk in wild garlic oil and rapeseed oil in a thin stream; it is important to do this slowly and carefully, or the mayonnaise may separate.
- 3. When the mayonnaise is nice and thick, season with salt and pepper to taste.
