Recipe for vegan pancakes with cardamom and syrup
I really enjoy traditional classic pancakes, but the small American pancakes are truly delightful for both weekday breakfasts and weekend brunches.
I am crazy about cardamom, so I have updated this vegan recipe to include a good taste of cardamom – while still achieving a thick and fluffy result.
Many people often wonder if it’s possible to make good pancakes without eggs. But indeed you can, as the batter is thick and elastic enough to give the same result as if eggs were included. Just make sure to cook them with an appropriate amount of butter or coconut oil.

Ingredients
- 500 gram Almond Milk
- 237 gram Flour
- 5 gram Baking Soda
- 4 gram Cardamom
- 6 gram Sea Salt
- 28 gram Butter Plant butter for frying
- Maple Syrup Or citrus caramel syrup for garnish
Instructions
- In a bowl, whisk together almond milk, flour, baking powder, cardamom, and salt. Let the batter rest for about 1/2 hour. Add 2 tbsp of plant butter or coconut oil to a hot pan. Fry the American pancakes in the pan, preferably 2-3 at a time, for a few minutes on each side. Flip the pancakes when they are golden and cohesive. Serve the pancakes with fresh berries, fruit, and a good homemade syrup. (see below).

It's actually quite easy to make your own syrup for a breakfast like this.
So if you want to try something other than the traditional maple syrup from the kitchen cupboard, I can recommend an easy citrus caramel syrup:
Make the syrup with 1 dl of water, 1/2 dl of sugar, and about 4 tbsp of lemon juice, depending on how tangy/sweet you want it.
Boil all the ingredients for the syrup in a pot without a lid for about 10 minutes on low heat and stir.
Test if the syrup is ready by taking a few test drops on a plate.
It should be thick and liquid - and not solidify.
If it becomes thick caramel, add a little extra water.
It's really an easy and delicious way to make your own sweet syrup.
You can also vary the flavor with, for example, licorice, cinnamon, or orange depending on what suits the dish and the season.
