Recipe for tuscan salmon
Tuscan Salmon. I owe this to many, and many have asked for it, but I was a bit lazy to translate it into Danish!
Really delicious and easy. A true taste of Tuscany and Italy.
We had it together with small roasted potatoes.
We are absolutely captivated by this dish.

Equipment
- Frying Pan
- Cutting Board
- Knife
Ingredients
- 4 pcs. Salmon Fillet
- Salt and Pepper
- Oil for frying
- 4 cloves Garlic
- 150 gram Mushroom
- 150 gram Cherry Tomatoes halved
- 70 gram Sundried tomatoes
- Fresh spinach a handful
- 300 gram Cream
- 15 gram Parmesan finely grated
- 9 gram Capers optional
Instructions
- The salmon is sprinkled with salt and pepper and fried in a little oil for a couple of minutes on each side.
- Then it is removed from the pan.
- Mushrooms, garlic, tomatoes, sun-dried tomatoes, and spinach are cut into pieces.
- First, fry the garlic, mushrooms, and both types of tomatoes a little in the pan.
- Then add the spinach, and let it all simmer until the spinach has wilted.
- Next, pour in the cream and parmesan, and let it all cook down a bit.
- Finally, place the salmon back in the sauce and warm it through for a couple of minutes.
- If you love capers, you can sprinkle them over.
- Serve with a piece of good bread.
