Recipe for tuscan salmon

Tuscan Salmon. I owe this to many, and many have asked for it, but I was a bit lazy to translate it into Danish!

Really delicious and easy. A true taste of Tuscany and Italy.

We had it together with small roasted potatoes.

We are absolutely captivated by this dish.

Equipment

  • Frying Pan
  • Cutting Board
  • Knife

Ingredients

  • 4 pcs. Salmon Fillet
  • Salt and Pepper
  • Oil for frying
  • 4 cloves Garlic
  • 150 gram Mushroom
  • 150 gram Cherry Tomatoes halved
  • 70 gram Sundried tomatoes
  • Fresh spinach a handful
  • 300 gram Cream
  • 15 gram Parmesan finely grated
  • 9 gram Capers optional

Instructions

  • The salmon is sprinkled with salt and pepper and fried in a little oil for a couple of minutes on each side.
  • Then it is removed from the pan.
  • Mushrooms, garlic, tomatoes, sun-dried tomatoes, and spinach are cut into pieces.
  • First, fry the garlic, mushrooms, and both types of tomatoes a little in the pan.
  • Then add the spinach, and let it all simmer until the spinach has wilted.
  • Next, pour in the cream and parmesan, and let it all cook down a bit.
  • Finally, place the salmon back in the sauce and warm it through for a couple of minutes.
  • If you love capers, you can sprinkle them over.
  • Serve with a piece of good bread.
