Recipe for tartare of shellfish
A light and delicious small dish consisting of a shellfish tartare served on toasted bread, garnished with potato chips and halved soft-boiled quail eggs.
In this recipe, we used an elongated mold intended for chocolate bars, but you can basically use any type of cookie cutter for this recipe.

Tartare of shellfish
Ingredients
- 4 pcs. Lobster Tails
- 1 pcs. Crawfish the meat thereof
- 1 pcs. Shallots finely chopped
- Lemon Juice
- Spices salt and pepper
- 6 pcs. Quail Eggs
Instructions
- Chop the langoustine tails and the langouste meat finely.
- Add finely chopped shallots and season with lemon juice, salt, and pepper.
- Cut the toast bread thinly and lightly toast it.
- Trim the toast to fit into a mold. We used a mold meant for making chocolate bars, but you can also use different shapes and sizes of cookie cutters.
- Place the shellfish tartare on the bread in the molds and chill.
- Boil the quail eggs so they're soft-boiled, which takes about 3 minutes. Let the eggs cool in cold water, peel them, and cut them in half.
- Serve the small "bites" garnished with wood sorrel, the halved quail eggs, and homemade potato chips.
Notes
The presentation will be extra delicious if you use homemade toast bread for the purpose.
