The most delightful summery strawberry tomato salad is here. The salad is fresh, simple, and actually consists of quite few elements, but elements that complement each other incredibly well. The spinach itself is quite neutral, but it looks beautiful and really allows the strawberries and tomatoes to shine. In addition, I have crispy sugar snap peas and soft creamy feta.

The most delightful summery strawberry tomato salad is here. The salad is fresh, simple, and consists of very few elements, but elements that complement each other incredibly well. The spinach is quite neutral on its own but looks beautiful and really allows the strawberries and tomatoes to shine..
Additionally, I have crispy sugar snap peas and soft creamy feta.

Everything is tossed in a good balsamic vinegar, resulting in a beautiful and delicious salad that’s ready in just 10 minutes.

Balsamic vinegar comes in light and dark varieties. They have a slightly tangy flavor that pairs well with many salads – especially those with a slightly sweet element, like the strawberries here. The balsamic creates a fine counterbalance to the sweetness and adds flavor to the salad. You can use balsamic as it is when you buy it. But you can also simmer it in a small pot until it reduces to about half and has a slightly syrupy consistency (glaze) – this gives it an even more intense flavor and is perfect for just drizzling on top of salads.

I use the quick, store-bought version in this salad, but the glaze would also complement it well.

Ingredients

  • 75 gram fresh spinach
  • 1-2 tablespoon Balsamic Vinegar good
  • 500 gram Strawberry
  • 200 gram Cherry Tomatoes
  • Salt and Pepper Freshly ground
  • 1 bunch Basil Leaves
  • 100 gram Sugar Snap Peas + optionally a handful of fresh peas
  • 100 gram Feta crumbled

Instructions

  • Rinse and drain the spinach. Put it in a bowl and toss with a bit of balsamic. Arrange on a platter.
  • Rinse strawberries and tomatoes and cut into smaller pieces. Put them in a bowl and season with a little salt and pepper. Let sit for a moment.
  • Chop basil and toss with strawberries and tomatoes. Cut sugar snap peas into small pieces and toss in the bowl along with peas.
  • Arrange your strawberry/tomato mixture on top of the spinach. Sprinkle with crumbled feta and serve
