The combination of fresh greens, fatty fish, creamy feta, flavorful dressing, and crunchy, salty almonds is simply perfect.
If you have salted almonds on hand, this salad takes only 10 minutes to make. If not, you can easily make your own salted almonds or substitute them with other nuts or seeds…

This salad is excellent for both lunch and dinner and is packed with essential vitamins and dietary fiber.

Spinach Salad with Salmon, Feta, Salted Almonds, and Mustard Dressing
Ingredients
- 4 handful Fresh spinach rinsed
- 125 gram Edamame Beans shelled. thawed from frozen
- 1/2 pcs. Cucumber diced
- 125 gram Hot smoked salmon
- 2 handful Feta crumbled
- 2 handful Salted almonds chopped
Mustard Dressing
- 2 tablespoon Sour Cream
- 1 tablespoon Mayonnaise
- 1 tsp. Dijon Mustard
- 1 tsp. Sweet mustard
- 1 tsp. Honey liquid
- 1 tsp. Lemon Juice
- Salt and Pepper
Instructions
- Rinse the spinach and divide into 2 bowls/plates.
- Distribute beans, salmon, cucumber, feta, and almonds on top.
- Mix all the ingredients for the dressing together and serve your salad with the dressing on the side.
