Savory pancakes taste absolutely fantastic and offer endless possibilities for varying the fillings you put inside. Here, I’ve made savory spinach pancakes, filled them with spicy beef, and topped them with cottage cheese, fresh tomatoes, and olives – a mix that just hits the spot perfectly.

Spinach pancakes are both healthy, easy, and filling, perhaps even a favorite on our table at home. The boys find the green color amusing, and I must say, they look good and taste delicious!

The spinach flavor in the pancakes is in no way overpowering. You can sense it slightly, which complements the dish very well, but otherwise, the pancakes are quite neutral in flavor, which is great when you want to add a spicy filling that stands out. If you desire more flavor in the pancakes, just add more spices or herbs. This version is quite versatile and fits with most fillings, but there is plenty of room to tailor the spinach pancakes exactly to your liking.

Ingredients

Pancakes

  • 75 gram Fresh spinach
  • 3 pcs. Egg
  • 400 gram Milk
  • 150 gram Wheat Flour
  • 3 gram Salt
  • Pepper a little
  • Butter for frying

Fill

  • 400 gram Ground beef
  • 1 pcs. Onion
  • 3 pcs. Carrots
  • 1 pcs. Yellow pepper
  • 1/2 can Chopped Tomatoes
  • 1 pcs. Chili small red chili pepper
  • 6 gram Paprika
  • 6 gram Salt
  • 1 gram Pepper
  • 0.5 gram Nutmeg
  • 0.5 gram Cumin
  • 0.5 gram Chopped coriander
  • 1 handful Grated cheese

Topping

  • 100 gram Cottage Cheese
  • 8-10 pcs. Cherry Tomatoes cut in half
  • olive Green

Instructions

Spinach Pancakes

  • Put all the ingredients for the pancakes in a blender and blend until smooth.
  • Fry the pancakes in a little butter.

Filling

  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
  • Finely chop your onion and sauté it in a pot with a bit of butter. When the onions are soft, add the meat and let it brown.
  • Grate the carrots and cut the bell pepper into cubes, add to the pot. Cook for a few minutes.
  • Now put the remaining ingredients for the filling into the pot, stir well, and let it simmer for 5 minutes.
