Sooji ka halwa (Pakistani dessert)
A traditional Pakistani dessert consisting of semolina, sugar, and ghee/butter or oil.

Ingredients
- 180 gram Semolina fin
- 160 gram Sugar
- 2/3 pcs. Cardamom Capsule broken
- 150 gram Oil neutral in taste, can be substituted with butter/ghee
- 7 dl Water about*, mixed with a bit of color
- Pistachios or almonds for garnish
Instructions
- 1. Heat oil or butter in a pan. Add whole cardamom (remember to break/open them) and let it fry for 1-2 minutes on high heat. 2. Now add semolina and reduce the heat to medium. Stir for 7-10 minutes or until the semolina releases its fragrance. 3. Increase the heat, now add sugar and mix well. Be careful not to burn the sugar. 4. Now add the water - be careful it splashes - and stir well. Stir for 2-3 minutes or until the halwa doesn't stick to the pan. Garnish with dried nuts and optionally coconut on top.

*the amount of water added depends on the desired consistency of the halwa.
