
Recipe for salmon salad with squash and avocado cream
Here is a truly delightful and simple salad that offers both health and indulgence at the same time. Crisp mixed greens with gravlax, fresh zucchini, creamy avocado cream, and crunchy almonds. This is a salad that can be ready in just 15 minutes and can easily serve as a meal on its own.
If you want to add more substance to the salad, you can cook some green lentils and add them – but this will extend the preparation time. If you’re not into gravlax, smoked salmon will also work well in this salad. Either way, the salad makes for a top-notch lunch, a quick dinner, or a tasty snack.

Salmon salad with squash and avocado cream
Ingredients
Salad
- 1/2 pcs. Squash
- 100 gram mixed salad
- 100 gram Salmon gravad or smoked salmon
- 1/2 pcs. Avocado
- 1 handful Salted almonds salted almonds
Avocado Cream
- 1 1/2 pcs. Avocado
- 1/2 dl Sour Cream
- 1/2 dl Yogurt plain
- 1/2 tablespoon Lemon Juice
- Salt and Pepper
Instructions
- Start with the avocado cream: mash or blend the avocado together with crème fraîche, yogurt, and lemon. Season with salt and pepper.
- Slice the squash into thin ribbons using a potato peeler and toss the strips with about half of the avocado cream.
- Cut the remaining half of the avocado into cubes and coarsely chop the almonds.
- Rinse your salad and arrange it on a plate with the squash, salmon, avocado, and almonds.
- Serve with the remaining avocado cream on the side
