Recipe for root vegetables in a casserole with spiced beef, cheese, and avocado
Dinner today was of the healthy, yet truly delicious and indulgent kind: Root vegetables in a casserole with spiced beef, cheese, and fresh avocado.
Everything is served in this one dish and is ready to enjoy as it is – it tastes just delightful!
For root vegetables, I used sweet potatoes, yellow and red beets, and carrots, along with some red onions. The minced beef is well-seasoned and pairs superbly with the root vegetables. A bit of melted cheese and avocado on top turns this into a real comfort food dish.
The dish is super easy, takes no more than 10 minutes to prepare, and the rest of the time is oven time.
You can use any root vegetables you like; parsnips, celeriac, and Jerusalem artichokes, for example, would also be good, and the beef can be replaced with minced chicken if you prefer.
Regardless, it’s a delicious, indulgent dish that tastes wonderful and is filled with healthy goodies.
If you want to make it extra luxurious, make some guacamole and serve it on the side.
