Recipe for romaine lettuce with peas and parsley

Delicious, crispy, and exciting salads are, as you know, my passion! And I am constantly experimenting with new variations.

This time, it turned into a truly delightful and super simple version with Romaine lettuce, peas, parsley, and a delicious homemade crème fraîche dressing.

Romaine lettuce with peas and parsley

The fantastic thing about salads is that they don’t have to be complicated to be wonderful. They just need to be fresh and crispy, and they should ideally have a bit of sour, salty, and sweet flavors to achieve good depth.

Romaine lettuce has a lovely mild, delicate lettuce flavor, so the sweet peas, aromatic parsley, and slightly tangy crème fraîche dressing work really well together here.

As for crispiness, Romaine lettuce is great for salads with dressing because it doesn’t get soggy like iceberg lettuce might.

I would say that this salad is best served as a side dish rather than as a full meal on its own. However, if you add some chicken, it can certainly work as a good, filling lunch too!
