Quick-fried Tiger Prawns
Delicious and delightful vannamei/tiger prawns are always a sure hit at our home. They take incredibly little time to make and taste great. The key to success with them is to ensure they are well dried and at roughly room temperature before they hit the pan.

Ingredients
- 250 gram Tiger prawns Vannamei
- Oil Taste-neutral. For frying
- Salt
- Pepper From mill
Instructions
- Sometimes I buy my tiger prawns fresh or frozen.
- However, I never buy them pre-cooked as I prefer to cook them myself.
- If bought frozen, they go in the fridge in the morning if I plan to have them for dinner. I always place them in a bowl or with a dishcloth underneath.
- 15-20 minutes before cooking, take them out of the fridge and peel them.
- The shells go in a bag and into the freezer. They are used either for a bisque or to make a shellfish oil that you can use for a shellfish mayo.
- The prawns are then well dried and left to dry on a towel until ready to be fried. It is important that they are not too cold/wet when they hit the pan as they will "boil" rather than fry.
- Before frying, season them with salt and pepper.
- The pan should be quite hot, but not smoking hot. On my induction hob, that means 11 out of 14.
- Add oil to the pan and make sure it reaches the temperature before adding the prawns.
- Add all the prawns at the same time and fry them for 1 minute.
- Turn them all and give them 10-20 seconds on the other side.
- The prawns are now ready to be served.
