Recipe for quesadillas with salmon, spinach, and cottage cheese

Quesadillas; easy, quick, and delicious breakfast, lunch, or dinner – just what you need…

It’s basically “just” tortillas with filling in between, then fried in a pan – very simple, but it tastes wonderful! And it’s perfect when you need to prepare food in a hurry…

This version is with spinach, fried salmon, and cottage cheese. Crispy on the outside and filled with creamy deliciousness and flavor inside.

I served it with a super quick chunky guacamole, and the best part? It’s all ready in just 20 minutes.

Ingredients

Quesadillas

  • 4 pcs. Tortillas
  • 2 handfuls Fresh spinach
  • 200 gram Salmon Fillet
  • 100 gram Cottage Cheese
  • 2 handfuls Grated cheese

Coarse, quick guacamole

  • 2 pcs. Avocado
  • 5 gram Lemon Juice
  • 7.5 gram Sour Cream
  • Salt and Pepper

Instructions

Quesadillas

  • Start by frying the salmon in a pan, season with salt, pepper, and a bit of lemon juice.
  • Remove the salmon from the pan and instead place a tortilla on it. Spread 1 handful of spinach, half of the salmon, and half of the cottage cheese on the tortilla. Also sprinkle 1 handful of grated cheese on top and place another tortilla on top, making it almost a “tortilla sandwich”.
  • Fry the quesadilla for 2-3 minutes on each side, until it becomes golden and crispy.Remove it from the pan and make another one with the remaining half of the ingredients.

Guacamole

  • Mash the avocados and mix with the remaining ingredients.
  • Serve your quesadillas with guacamole.
