Quesadillas with salmon, spinach, and cottage cheese
Quesadillas; easy, quick and delicious breakfast, lunch or dinner – yes, whatever you fancy…It’s basically “just” tortillas with filling in between and then fried on the pan – very simple, but tastes wonderful! And it's genius when you need to prepare food quickly…
Start by frying the salmon in a pan, season with salt, pepper, and a bit of lemon juice.
Remove the salmon from the pan and instead place a tortilla on it. Spread 1 handful of spinach, half of the salmon, and half of the cottage cheese on the tortilla. Also sprinkle 1 handful of grated cheese on top and place another tortilla on top, making it almost a “tortilla sandwich”.
Fry the quesadilla for 2-3 minutes on each side, until it becomes golden and crispy.Remove it from the pan and make another one with the remaining half of the ingredients.
Guacamole
Mash the avocados and mix with the remaining ingredients.
