Purple Cabbage Salad with Avocado and Beets

Ingredients

Salad

  • 0.5 pcs. Pointed Cabbage purple
  • 2 pcs. Avocado ripe
  • 1 pcs. Beetroot cooked
  • 2 handfuls Parsley
  • Peanuts Honey roasted - or other honey roasted nuts)

Honey Dressing

  • 20.25 gram Olive Oil
  • 15 gram Lemon Juice
  • 14 gram Honey liquid
  • 5 gram Dijon Mustard

Instructions

  • Mix the dressing together, and adjust with salt and pepper if needed.
  • Finely slice the cabbage and toss it with the dressing.
  • Dice the avocado and beets and finely chop the parsley.
  • Mix all three ingredients into the cabbage.
  • Arrange on a plate or in a bowl and sprinkle with peanuts/nuts.
  • Honey-roasted nuts are available in most places right now; alternatively, you can make them yourself or just use regular chopped nuts.
