Recipe for puree

PUREE, Silky Smooth, Extremely Tasty, and Wildly Underrated – see how here! You need a side dish for your steak, chicken, duck, fish.. I often thought, oh no, potatoes again.. I had heard about Puree, but was first properly introduced to it on Masterchef on TV3 a few years back. It immediately piqued my curiosity. Vegetables, butter, a new kind of side. What’s not to love? 🙂 Many Purees later, I feel quite confident in my method. Puree can, as mentioned in the video, be made from almost any kind of vegetable, so take this as a sort of basic recipe, and play with it. You don’t see me adding two cloves of garlic in the video – but I do :-). This is good for most Purees as it adds a bit of edge to the often sweet vegetable. I also like to season with, for example, apple cider vinegar to bring a bit of acidity and edge to the Puree. Bon appétit.

Ingredients

  • 1 pcs. Cauliflower Optional to use cauliflower or celeriac
  • 1 pcs. Celery Optional to use cauliflower or celeriac
  • 2 cloves Garlic
  • Whole Milk
  • Cream
  • Spices Salt and white pepper

Instructions

  • - A potful of vegetables that you like, here: - Cauliflower - Celeriac - 2 cloves of garlic - Whole milk - cream - butter - salt - white pepper (it looks nicer in a white Puree) - possibly apple cider vinegar for seasoning.Cut vegetables into small cubes and put them in a pot.Cover the vegetables with whole milk and cream, the ratio between the two depends on the size of your pot / amount of vegetables - and your relationship with cream :-DLet it simmer for about 20 until the vegetables are cooked tender.Pour everything through a sieve and save both liquid and vegetables.Put the vegetables in a blender with a little milk.Better too little than too much.You can't thicken your Puree again if you've added too much liquid.When the blender has started and the whole mixture is spinning in the machine, add butter little by little.You can still add a little milk until the Puree has the consistency you like best.Season with salt, white pepper and possibly apple cider vinegar.Serve the Puree with all types of meat and dishes.Enjoy.
