
Recipe for portobello burger
A light and quick lunch without bread but with plenty of flavor is perfectly possible.
In under fifteen minutes, you can make your own portobello burger, where the delightful mushroom replaces the burger bun.
We have the recipe from the book: “Anti-Inflammatory Diet for Beginners“, written by Elizabeth Nebelong. She offers the following tip for the recipe:
“Instead of the mushrooms, you can of course use a whole grain bun for everything. The herb for the pesto is classic basil, but you can also make it with, for example, parsley.”

Portobello Burger
Ingredients
- 100 gram Portobello Mushrooms 2 large
- Salt and Pepper
- 60 gram Chicken cooked
- 50 gram salad mixed
- 0.5 pcs. Avocado
- 50 gram Tomato sliced
- 50 gram Onion sliced
- 25 gram Parmesan shaved
Pesto
- Herbs
- 4.5 gram Olive Oil
- 5 gram Mustard
- 5 gram Vinegar light
Instructions
- Clean the mushrooms and remove the gills inside.
- Cook the mushrooms until tender on a grill pan (about 10 minutes), season with a little salt and pepper.
- Place one mushroom cap side up.
- Rinse and dry the lettuce leaves.
- Peel the half avocado and slice.
- Place lettuce, chicken, onion, tomato, and avocado on top and finish with parmesan.
- Finally, pour over a pesto and place the other mushroom on top.
- Combine herbs, oil, mustard, and vinegar in a mini chopper and blend into a pesto, optionally diluting with a little water to the right consistency.
