Recipe for pizza muffins with ham, pepperoni, and spinach

These ones are made with ham, pepperoni and spinach, topped with tomato and grated cheese…
But actually, you can put in whatever you like, so they are also pretty handy for clearing out the fridge…
These soft, fluffy muffins are really easy to make, no rising time or fuss and ready in half an hour from start to finish
They can of course be frozen and taken out as needed – just warm them for 5-7 minutes and they are as good as freshly baked – a great addition to the kids’ rye bread sandwiches.

Ingredients
- 1 pcs. Egg
- 150 gram Milk
- 100 gram Yogurt plain or similar
- 14 gram Oil flavor neutral
- 6 gram Salt
- 2 gram Oregano dried
- 5 gram Baking Soda
- 75 gram Ham Strips
- 50 gram Pepperoni
- Fresh spinach 1 handful, rinsed
- 50 gram Rye Flour
- 200 gram Wheat Flour
- 100 gram tomato sauce or ketchup or similar
- Grated cheese 1 handful
Instructions
- Preheat oven to 200 degrees Celsius (392 degrees Fahrenheit), regular oven.
- Put eggs, milk, oil, salt, oregano, and baking powder in a bowl and whisk together.
- Finely chop ham, pepperoni, and spinach and fold in along with the two types of flour.
- Distribute in muffin cases, filling only 2/3 full.
- Put 1 tsp. tomato sauce on top of each muffin and top with grated cheese.
- Bake for 17-18 minutes until fully cooked and the cheese is golden.
- Then they are ready.
