
Recipe for pearl barley salad with cottage cheese and greens
Simple, colorful, healthy, and delicious salad with pearl barley, cottage cheese, and plenty of greens. No frills, but lots of good things and flavor straight to your stomach. The cottage cheese complements the fresh vegetables wonderfully, and the pearl barley provides fullness and texture—a good satiating salad.
The salad works well as a side dish but can also be enjoyed on its own.
If you wish, the pearl barley can be replaced with couscous, bulgur, spelt kernels, or similar grains.

Pearl Barley Salad with Cottage Cheese and Greens

Ingredients
- 160 gram Pearl Barley
- 500 gram Water
- 6 gram Salt
- 1/2 pcs. Cucumber
- 1/2 pcs. Red bell pepper
- 2 pcs. Tomato
- 1 can Corn
- 7.5 gram Lemon Juice
- 200 gram Cottage Cheese
- 1 handful Parsley
- Salt and Pepper
Instructions
- Cook pearl barley for 15-20 minutes in 5 dl water with 1 tsp salt added.
- Cut cucumber, bell pepper, and tomato into cubes. Finely chop the parsley.
- Drain the water from the pearl barley and let them cool. Toss them in a bowl with the vegetables, corn, parsley, cottage cheese, and lemon juice.
- Season with salt and pepper and serve.
