Pour 300 ml of the milk into a bowl and add the oats. Let it soak for 10 minutes.
Add flour, sugar, salt, and mix well. Then add eggs one at a time, and finally the liquid fat.
Let the batter rest in the fridge for 10 minutes and add the remaining milk until the batter has the desired consistency. If you add all of it, you will get a batter that spreads well and gives thin pancakes. If you add less, the batter will be thicker and produce thicker (mom-style) pancakes*.
While heating a pan, place a small amount of fat in the center and spread it with a piece of kitchen paper. It should just be a thin layer, and the excess fat is discarded along with the kitchen paper.
Pour the batter onto the pan and bake at medium heat for about a minute on each side. We usually place them in a folded piece of aluminum foil on a plate. This keeps them warm and you get nice, soft, and warm pancakes.
