
Recipe for oyster mayo
My take on a delicious oyster mayonnaise.
After learning the immersion blender trick, I must admit that I almost never make Bearnaise sauce or mayonnaise without an immersion blender.
Therefore, my starting point here is also to use it to succeed with a delightful mayonnaise made with oysters.
All the quantities are approximate, so it’s about adjusting to taste.

Equipment
- Cutting Board
- Knife
- Immersion Hand Blender
Ingredients
- 2 pcs. Oyster
- 1 pcs. Egg
- 3 gram Salt
- 5 gram Lemon Juice circa
- 91 gram Oil neutral in flavor - e.g., rapeseed oil
Instructions
- Open 2 oysters and put the meat and juice into a tall glass (e.g., use the one that comes with your hand blender).
- Add egg, salt, and a bit of lemon juice.
- Place the hand blender at the bottom and blend it together. This takes about 20-25 seconds.
- Place the hand blender at the very bottom of the glass and pour in the oil.
- Blend while it’s at the bottom and lift it very slowly upwards as it emulsifies.
- Optionally, adjust the taste with more lemon juice/zest.
