Recipe for old-fashioned beef roast
Wonderful and delicious recipe for a good, old-fashioned beef roast.
My recipe uses a beef thick flank, but the meat can easily be substituted with a boneless beef shoulder.
The meat is slow-braised in red wine, which provides a perfect basis for a good gravy.

Ingredients
- 1 kg Beef Chuck Roast Can be replaced with boneless chuck roast. It doesn't matter much for the recipe whether the meat pieces are 1 or 2 kg
- 100 gram Bacon
- 5 pcs. Onion
- 5 cloves Garlic
- 1 bunch Fresh thyme
- Salt
- Pepper
- 0.5 l Vegetable Stock
- 0.5 l Red Wine
Instructions
- If your meat is not tied, it is a good idea to start by tying it.
- This ensures that the meat has a uniform shape and gets an even cooking.
- Sauté large pieces of good bacon together with onions and garlic as well as a bunch of fresh thyme.
- Season the meat well with salt and pepper and brown it on all sides.
- Add half a liter of red wine and half a liter of vegetable stock.
- Put the lid on and let it simmer for at least 2.5 hours on low heat until the meat is tender.
- The meat is now ready to serve.
- Serve with white potatoes and a brown sauce made from the meat stock.
