Recipe for old-fashioned apple slices

An authentic recipe for original “æbleskiver” from the 1600s.

The recipe differs from today’s “æbleskiver” by being cooked in palm oil, and they actually contain apple!

Try them; they are a delicious alternative to the other Christmas cakes.

Old-fashioned Apple Slices

Ingredients

  • 150 gram Milk
  • 150 gram White Wine
  • 300 gram Wheat Flour + a little flour to coat the apples
  • 3 pcs. Egg
  • 42 gram Honey
  • 4 gram Cardamom ground
  • 6 pcs. Apples large apples
  • Flour for the apples
  • 1 package Palmin

Instructions

  • 1.    Separate egg whites and yolks.
  • 2.    Mix egg yolks, honey, flour, and cardamom together.
  • 3.    Gradually add the milk while stirring to avoid lumps!
  • 4.    Add the white beer and stir gently.
  • 5.    Beat the egg whites stiff.
  • 6.    Fold 4 tbsp. batter into the egg whites with a spatula.
  • 7.    Now gently fold the egg whites into the rest of the batter.
  • 8.    Remove the core from the apples and peel them if desired. 
  • 9.    Slice the apples into rings and pat dry with paper towels.
  • 10.  Put shortening in a pot or oil in a deep fryer and heat to medium temperature (130 degrees Celsius (266 degrees Fahrenheit)).
  • 11.  Coat the rings in flour.
  • 12.  Dip them in the batter, place them gently in the pot, and fry until they become golden—do not fry too many at once (approx. 3-4 pieces).
  • 13.  Take them out and place on a rack or plate with paper towels.
  • 14.  Increase the heat to medium-high (180 degrees Celsius (356 degrees Fahrenheit)) and fry the apple slices again.
  • 15.  Place them on a rack and let them cool a bit.
  • 16.  Dust with powdered sugar and play your favorite Christmas song!

Notes

These authentic apple slices are typically served without any toppings, but you can certainly enjoy them with extra powdered sugar and jam if you like.
