Recipe for morning bowl with vanilla chia pudding and green smoothie
Here you get a lovely morning bowl with a mix of sweet chia pudding and a fresh and creamy smoothie. I like to blend chia pudding with smoothie because it provides a variety of textures, which I find more interesting to eat than just one consistency throughout – and it tastes wonderful when the sweet meets the fresh.
I have added a bit of oats to the chia pudding; it adds fullness and texture and is good for satiety. But if you don’t like oats in it, you can easily leave them out.
The smoothie is made with banana, spinach, mango, pineapple, and broccoli. Whether you use fresh or frozen fruits and vegetables doesn’t matter much – both work. On top, I have crunchy granola (recipe for a homemade version here), even more fruit, and some chopped hazelnuts. All in all, a delightful mix of fresh, sweet, soft, creamy, and crunchy.
A morning bowl like this is both easy and quick and really does good for the stomach and taste buds. It’s a delicious, fresh, and healthy way to start the day.
I stir the chia pudding together when I get up, and then it sits and thickens, becoming ready to use while I am in the shower. Alternatively, it can be prepared the night before and be ready to use when you wake up.
